Salumificio Pedrazzoli returns to Biofach in Nuremberg once again, to present an exclusive preview of the new Montanera organic line of Black Iberian Bellota Pig: a line of healthy, organic products with exceptional flavor encapsulating the values of craftsmanship, tradition and respect for natural rhythms and tastes.
Montanera is Salumificio Pedrazzoli’s most recent project: a journey of discovery of the black Iberian bellota pig, an excellence in Spanish breeding and charcuterie that perfectly matches the organic philosophy, a cornerstone of Pedrazzoli’s production.
The particularity of this product concerns the optimal living condition of the animal. The Iberian pig typically lives in dehesa, exclusively outdoor environments rich in forests and pastures. For a certain period of the year – namely, montanera – the Iberian pig lives on more than three hectares of land per animal, feeding from November to March exclusively on acorns and fresh grass that it manages to find on its own in the dehesa. To respect the product and the grazing period, slaughtering takes place only once a year, precisely at the end of the montanera. This is what makes exclusive the production, the opportunity to taste and pre-order the product during all the BioFach days.
Salumificio Pedrazzoli is always full of surprises. On the occasion of this special summer edition of Biofach we will present a preview of the Bellota, paleta di nero iberico, or shoulder of the bellota black Iberian pork ham.
One of our professional cutters will hand-cut the product and tastings will be organized by appointment
Customers attending the Fair will also be given the exclusive opportunity to be able to pre-order products from the Montanera line of bellota Iberian black pork: an exclusivity given not only by the exceptional nature of the product, but also and especially by the limited number of pieces available.
Together with this already rich event is another great return! For the duration of the Bio Fach, once again Daniele Reponi will be present. The gourmet sandwich chef will corroborate the products present with his experience and creativity. In this edition, the product we have chosen for Daniele is another specialty of excellence of our PrimaVera: Mortadella Bio.
PrimaVera Bio is the first true line of cured meats from organic farming in Italy born in 1996 as a natural evolution of the company’s vocation to try to reduce the use of preservatives in its products. Following the first experiments on recipes for more and more natural products, a collaboration with the University of Cremona was born. Innovative fermentation methods were developed, allowing the company to gain such success that it decided to diversify its products, creating an entire line of preservative-free organic products, the first in Europe. The production of the PrimaVera Line is guaranteed by a closed cycle, entirely dedicated to organic. The pigs are raised with full respect for the animal and the environment: they live free in large areas of pasture, with an exclusively vegetable diet from organic crops, treated with homeopathic and phytotherapeutic medicines. In Germany in 1998, Salumificio Pedrazzoli was awarded at the Biofach Fair in Nuremberg, the world’s largest platform of the organic sector, the first “Quality and Innovation in Organic” award for having designed and produced Organic Parma Ham. In 2012, Prosciutto di Parma Bio was ranked the best for “Chemical Quality” and “Microbiological Quality” by Stiftung Warentest magazine (test 01/12). In 2016 the Primvera line was awarded the prestigious “Good Pig 2016” award within the Animal Welfare Awards by the CIWF (Compassion In World Farming), thanks to its commitment to raising meat pigs on farms that respect animal welfare.
Salumificio Pedrazzoli, a family-owned Italian company with origins in Mantua founded in 1951, is now a leader in the production of organic cured meats, which complement traditional production and the Q+ line of extra selected gourmet meats. Salumificio Pedrazzoli is a closed-cycle company, a flagship in the industry with its own pork supply chain, from breeding to finished product. The company and the Salumificio Pedrazzoli farms are distinguished by a total focus on eco-friendly development and in full compliance with sustainability even at the energy level.
